Baked Whole Snapper with Leek and Lemon

Snapper is a good quality eating fish and are one of the most popular table fish in Australia. Seafood is always the best!




Serves : 2 to 3


Ingredients

  • 1 to 1.2 kg whole snapper, cleaned
  • 1 cup leek, sliced
  • 1 whole lemon, sliced
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Method

  1. Preheat the oven into 220 °C (fan forced).
  2. Lay enough aluminum foil (enough to cover the whole fish) in the baking tray. Then put the snapper on it.
  3. Season the snapper with salt and pepper.
  4. Put the leek and a couple of sliced lemon inside and on the the top of the fish. 
  5.  Cover the snapper with aluminum foil.
  6. Bake the fish for 45 minutes or until cook.
  7.  Serve immediately.
