Garlic Grilled Australian Bonito

Australian bonito is available year round, with peaks from March to June. This seafood recipe is so easy to make!



Serves: 4


Ingredients
  • 2 whole Australian bonito, butterfly cleaned and gutted
  • 3 tablespoons olive oil
  • 1 head of garlic , peeled and crushed
  • salt to taste

Method
  1. Using mortar and pestle crush the garlic into paste then add olive oil and salt to taste.
  2. Brush the flesh with the garlic paste and grill on the oven for 30-40 minutes or until cook. Remove from the oven.
  3. Serve immediately with a fresh salad or rice.
