Comfort Food Chicken Sopas


Sopas is a Filipino macaroni soup made with macaroni pasta, carrots, cabbage, meat (usually chicken) and chicken offal (e.g. liver, gizzard and heart) in a broth with creamy evaporated milk. It is regarded as a comfort food in the Philippines and is typically eaten during breakfast with hard boiled egg, cold weather, special occassions and served to sick people.

Our Nanay served sopas, if not pansit for our breakfast. And she loves cooking it for special occasions.



Serves: 4








Ingredients

  • 500 grams chicken thigh, boiled, shredded and bones removed
  • ¼ piece cabbage, sliced
  • 1 piece medium onion, chopped
  • 4 pieces hotdog, sliced
  • 2 pieces medium carrots, small strips
  • 1 tin (340 ml) evaporated milk
  • 1 ½ cups macaroni pasta
  • 4 cloves garlic, chopped
  • cups salt reduced chicken stock
  • 1 tablespoon butter 
  • Salt and ground black pepper to taste.








To Serve:

  • hard boiled egg
  • soft bread roll








Method

  1. Heat a large deep pot in medium heat, then add the butter. 
  2. Sauté the garlic and onions until soft.  
  3. Pour the chicken stock and let it boil.
  4. While the stock is boiling, add the macaroni pasta, shredded chicken, sliced hotdogs and carrots. Stir and and boil. Let the pasta cook for at least 20 minutes, approximately.
  5. Add the cabbage. Stir and cook for  5 minutes. 
  6. Pour the evaporated milk. Stir and let it boil for another 3 minutes.
  7. Have a taste test. Season with salt and freshly ground black pepper to taste. Add salt if needed.
  8. Transfer to a serving bowl. 
  9. Serve hot!
