Comfort Food Chicken Sopas
Our Nanay served sopas, if not pansit for our breakfast. And she loves cooking it for special occasions.
Serves: 4
- 500 grams chicken thigh, boiled, shredded and bones removed
- ¼ piece cabbage, sliced
- 1 piece medium onion, chopped
- 4 pieces hotdog, sliced
- 2 pieces medium carrots, small strips
- 1 tin (340 ml) evaporated milk
- 1 ½ cups macaroni pasta
- 4 cloves garlic, chopped
- 9 cups salt reduced chicken stock
- 1 tablespoon butter
- Salt and ground black pepper to taste.
To Serve:
- hard boiled egg
- soft bread roll
Method
- Heat a large deep pot in medium heat, then add the butter.
- Sauté the garlic and onions until soft.
- Pour the chicken stock and let it boil.
- While the stock is boiling, add the macaroni pasta, shredded chicken, sliced hotdogs and carrots. Stir and and boil. Let the pasta cook for at least 20 minutes, approximately.
- Add the cabbage. Stir and cook for 5 minutes.
- Pour the evaporated milk. Stir and let it boil for another 3 minutes.
- Have a taste test. Season with salt and freshly ground black pepper to taste. Add salt if needed.
- Transfer to a serving bowl.
- Serve hot!
