Banana Bread with Mixed Dried Fruits and Walnuts

Easy to make banana bread if you have a few over riped bananas lying around at your place! 

I hope and pray everyone is doing well and stay healthy in this tough situation during lockdown, stay safe all! When the waters get rough, know that there are better times ahead. The seas will clear up, and stormy skies will turn blue.

Equipments and Utensils

  • loaf tin 26 cm x 13.5 x 6.5 cm (height)
  • microwave or stove for melting the butter
  • small sauce pan, if using stove
  • oven
  • containers for ingredients
  • measuring cups
  • measuring spoons
  • weighing scale
  • sifter
  • mixing bowl
  • wire whisk
  • spatula
  • fork for mashing banana
  • chopping board
  • knife 
  • wire rack for cooling
  • bread storage container






Ingredients

  • 125 grams butter, melted
  • 70 grams caster sugar
  • 1 teaspoon vanilla extract
  • 1 piece large egg
  • 2 pieces large ripe bananas, mashed
  • 1/4 cup fresh milk
  • 1 ½ cups self-raising flour, sifted
  • ⅔ cup Mixed Dried Fruit , sultanas, raisins, currants, and orange and lemon citrus peel 
  • ½ cup walnuts
  • oil for spraying






Method

  1. Preheat oven to 180°C (fan forced).
  2. Line the loaf tin with non stick baking paper and grease with oil.
  3. In a large bowl cream the butter and sugar.
  4. Then add vanilla, mashed banana and egg until combined together.
  5. Fold in the flour with milk and mix the dried fruits and walnuts until combined.
  6. Pour the batter in the prepared loaf tin.
  7. Bake for 40 to 45 minutes or until skewer comes out clean.
  8. Cool in loaf tin for 5 minutes, before turning onto a wire rack to cool completely.
